Fermented protein debuts in pioneering chocolate bar

The latest innovation insight from Gama Compass

MANCHESTER – 7th March 2024: In this month’s Innovation Insight, we look at a technological innovation that may provide an intriguing glimpse into the future of food, in the form of a confectionery bar containing precision-fermented protein – Fazer Taste The Future Chocolate Snack Bar.

Launched as a limited release in select sweets retailers in Singapore, Fazer Taste The Future Chocolate Snack Bar is a dark chocolate bar containing strawberries, hazelnut and Nordic oat puffs, but whose star ingredient is Solein, a proprietary protein developed from an organism created via a fermentation process. In addition to enhancing the bar’s protein levels,  Solein is claimed to enrich the flavour of the product and boost its iron content.

“The launch of Fazer Taste The Future Chocolate Snack Bar potentially heralds a new and disruptive era for food and drink manufacturing, where rapid technological advances enable the development of ingredients uninhibited by the constraints of conventional farming techniques”, commented Gama insights director Tom Warden. “If they can be produced at scale, and consumer wariness towards the technology overcome, fermentation-derived proteins and similar ingredients could see the food industry move one step closer to a ‘farm-free’ future”.
