Swiss retailer Coop has announced the launch of Nice to Save Food, a new brand lineup featuring products made from food “byproducts”.
Flagship ingredients in the new brand range include okara, generated during the production of tofu and soya drinks, and oat bran, a by-product of oats and oat flour. Both of these ingredients are claimed to be nutritious and versatile, with a good taste profile.
The aim of the brand is to combat food waste whilst also encouraging the discovery or rediscovery of new ingredients.
As a first step, the retailer will launch Organic Okara and Milky and Dark Fusion Chocolate, the latter described as being made with byproducts from chocolate.
The new products were developed in collaboration with Betty Bossi, which provided culinary expertise and knowledge in product innovation, technology and sustainability.
